In the 2024-25 season Şanlıurfa harvested 18.425 tonnes of olives from 2.316.000 bearing trees — an average of 8.0 kg per tree. Of that crop 1.970 t went to the table and 16.454 t to pressing, yielding 2.889 tonnes of olive oil.

The potential is there, the climate resists
Şanlıurfa is the Southeast's largest olive producer after Gaziantep. Growing takes place on the province's sloping, terraced land — ground unsuited to other crops but carrying real potential for olives.
That potential is not fully realised: high temperatures and insufficient rainfall are the two factors limiting the sector's development here. This is the Southeast's general constraint, and it makes irrigation decisive in the region.
The province's groves cluster around Bozova and Halfeti. Halfeti is one of three localities growing the Eğriburun variety (the others being Gaziantep-Nizip and Hatay-İskenderun). Kilis Yağlık, Nizip Yağlık and Halhalı are also widespread.
