Area and output shares are structural ratios from 2003; the tonnages are from the 2024-25 season.

Where and under what conditions

The olive is grown where the Mediterranean climate still reaches. Because rainfall is low, olive growing is confined to limited areas. A continental climate dominates, alongside a degraded Mediterranean climate whose influence extends west as far as the Euphrates.

South of the Şanlıurfa-Viranşehir-Mardin line lie broad plains below 500 metres, of which Harran and Ceylanpınar are the most important. The region is Turkey's richest in olive varietal diversity.

The region's character

The south-east is Turkey's richest region for olive diversity — 11 recorded varieties, level with the Aegean. Yet its share of output is only 6%. The wealth is genetic, not in scale.

The limiting factor is rainfall. A continental climate dominates, and the olive survives only where the Mediterranean climate still reaches — an influence that extends west as far as the Euphrates and effectively stops beyond it.

Gaziantep and Kilis are the region's production centres. Most of its varieties — Belluti, Hursuki, Melkebazi, Mavi, Zoncuk, Kan Çelebi — have no page here yet and no published measurements. The nameless genotypes of Mardin and Şırnak are a measured example of that gap.
