Büyük Topak Ulak is one of the recorded olive varieties of the Mediterranean.

Characteristics

Tarsus, Seyhan, İskenderun, Anamur, Erdemli ve Sütçüler (Isparta) de yetiştirilir. Menşei Tarsus olan bu çeşide bazı yörelerde Topak Aşı denir. Bakım yapıldığında oldukça iyi gelişen yayvan, geniş, büyük taç yapısı vardır. Meyveleri iri, çekirdekleri meyve büyüklüğüne göre küçük olup %20 civarında yağ içerir. Meyve eti yumuşaktır. Verimi iyidir. Periyodisite gösterir. Soğuğa ve kuraklığa aşırı duyarlı değildir. Etli ve lezzetli olan Büyük Topak Ulak çeşidi yeşil sofralık “Çizme zeytin” olarak işlenir.
