Chicken with Lemon and Green Olives
A Tuscan classic: chicken browned in olive oil, then brought together slowly with green olives and lemon.

Directions
- Rub the chicken pieces with salt and pepper.
- Heat the olive oil in a wide cast-iron pan and brown the chicken on all sides.
- Add the garlic, rosemary and thyme and cook for a minute.
- Pour in the wine or stock and let it bubble hard for 2 minutes.
- Add the olives and lemon slices, then squeeze in the lemon juice.
- Cook over low heat, partly covered, for 35 minutes, until the chicken is done.
- Serve with fresh bread or risotto.
