Horiatiki (Greek Village Salad)
Greece's national salad: Kalamata olives, ripe tomato, cucumber and a whole slab of feta. Plain, and exactly right.

Directions
- Arrange the tomato, cucumber, onion and pepper on a wide plate.
- Scatter the olives among them.
- Set the slab of feta whole in the centre — do not crumble it.
- Drizzle over the olive oil and vinegar. Season with salt, pepper and oregano.
- Serve at once, and do not toss it: in the Greek way the ingredients stay whole.
