Open Olive Flatbread (Pide)
Black Sea style open flatbread topped with black olives, cheese and oregano — the smell fills the house as it bakes.

Directions
- Mix the flour, salt and yeast. Add the warm water and 2 tablespoons of olive oil and knead to a smooth dough.
- Cover and leave to rise for 45 minutes.
- Heat the oven to 220°C. Divide the dough into 4 pieces and roll each into a long oval.
- Scatter over the grated cheese and the olives. Sprinkle with oregano and chilli flakes and drizzle with olive oil.
- Bake in the preheated oven for 18-20 minutes, until the base is crisp and golden.
- Serve hot.
