How to read this page

• These are registered transactions, not quotes or surveys: a buyer and a seller signed, and the quantity and price went into the record.
• The price shown is the last registration, not an average. In an inflationary series an all-time average tells you nothing.
• A gap between exchanges is normal. Different varieties, different quality, different dates. Two exchanges quoting different prices for "the same" product are usually not selling the same fruit.
• Absence is information too. An exchange with no table olive registrations does not mean none are grown there — it means that trade does not pass through the exchange.
